Ingredients:
- 6 boneless skinless chicken thighs (approximately 0.7kg total)
- ⅛ cup olive oil
- 2 tablespoons honey Dijon mustard
- 6 cloves of minced garlic (or 3 large cloves)
- Zest from two lemons
- ½ tablespoon salt (adjust if using table salt)
- Dry oregano, to taste
- 1 cup water or chicken stock (to add to the bottom of the pan)

Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a bowl, combine the olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and oregano. Stir well to create a marinade.
3. Place the chicken thighs in a large resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, allowing the flavors to meld.
4. In a large skillet, heat a little olive oil over medium-high heat. Once hot, add the chicken thighs and sear each side for 3-4 minutes until golden brown.
5. Transfer the seared chicken thighs to a baking dish. Add the water or chicken stock to the bottom of the dish to keep the chicken moist while baking.
6. Cover the baking dish with foil and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
7. Remove the chicken from the oven and let it rest for a few minutes before slicing.
8. Serve the herb-infused chicken in warm pita bread with your favorite gyro toppings, such as fresh tomatoes, cucumber, red onion, and tzatziki sauce.
