1/2 cup brown sugar
1/4 cup white sugar
1 tsp vanilla extract
1 cup all-purpose flour

2 tbsp milk
For the Cheesecake:
3 (8 oz) packages cream cheese, softened
1 cup sour cream
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs
1/4 cup all-purpose flour
1/2 cup mini chocolate chips (for topping)

Preheat the oven to 325Β°F (160Β°C). Grease and line a 9-inch springform pan with parchment paper.
Make the cookie dough: In a medium bowl, cream together butter, brown sugar, and white sugar until light and fluffy. Add vanilla extract and mix in flour and salt. Stir in mini chocolate chips and milk to form a dough. Roll dough into small balls and place them on a plate. Set aside in the fridge.
Prepare the cheesecake filling: In a large mixing bowl, beat cream cheese until smooth. Add sour cream, sugar, and vanilla extract, mixing until combined. Add eggs one at a time, mixing well after each addition. Add flour and mix until fully incorporated.
Assemble the cheesecake: Pour half of the cheesecake filling into the prepared pan. Place the chilled cookie dough balls evenly over the filling. Pour the remaining cheesecake filling on top, smoothing the surface.
Bake: Bake for 45β50 minutes, or until the center is just set (it will still slightly jiggle). Turn off the oven and let the cheesecake cool in the oven with the door cracked for 1 hour.
Chill: After the cheesecake has cooled, refrigerate for at least 4 hours, or overnight, to allow it to fully set.
Finish: Once chilled, top with additional mini chocolate chips before serving.
