Garlic Butter Surf & Turf Delight
Ingredients:
2 steaks (ribeye or filet mignon)
1 lb shrimp (peeled and deveined)
4 tablespoons butter
4 cloves garlic, minced
1 tablespoon olive oil
1/4 cup white wine (optional)
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon crushed red pepper flakes
Salt and black pepper to taste
2 tablespoons chopped parsley
Grated Parmesan (for garnish, optional)
Directions:
Season the steaks generously with salt and black pepper. Let them rest at room temperature while you prepare the shrimp.
In a large skillet, heat olive oil over medium-high heat. Add the steaks and sear until your desired doneness is achieved, about 3-4 minutes per side for medium-rare. Remove from skillet and let rest.
In the same skillet, lower the heat to medium. Add butter and let it melt. Stir in the minced garlic and sauté for about a minute until fragrant.
Add the shrimp, red pepper flakes, lemon zest, and a pinch of salt. Cook for 2 minutes, then pour in the white wine and lemon juice. Let simmer for another 2-3 minutes, or until shrimp is opaque and cooked through.
Sprinkle in chopped parsley and give the mixture a quick stir.
Slice the steaks and serve on plates with generous spoonfuls of the garlicky shrimp scampi on top. Garnish with grated Parmesan if desired.
