Southern Chocolate Cobbler

Ingredients:
1 cup all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
¾ cup granulated sugar (for the batter)
3 tablespoons unsweetened cocoa powder (for the batter)
½ cup milk
⅓ cup melted butter
1 teaspoon vanilla extract
½ cup granulated sugar (for the topping)
1 ½ cups hot water
Instructions:
Preheat the oven to 350°F (175°C).
Prepare the batter: In a medium mixing bowl, whisk together the flour, baking powder, salt, and ¾ cup of sugar. Add the cocoa powder and stir until everything is evenly mixed.
Add wet ingredients: Pour in the milk, melted butter, and vanilla extract. Stir until just combined. The batter will be thin, so don’t worry if it looks loose.
Transfer to the baking dish: Pour the batter into an ungreased 8x8 inch baking dish (or another similar-sized oven-safe dish).
Make the chocolate sauce: In a small bowl, whisk together the remaining ½ cup of sugar and the hot water until the sugar is dissolved.
Add the sauce to the batter: Slowly pour the sugar-water mixture over the batter. Do not stir—it will create a fudgy sauce as it bakes.
Bake the cobbler: Place the dish in the preheated oven and bake for 30-40 minutes, or until the top is set and slightly firm to the touch. The sauce underneath should be thick and bubbly.
Serve: Let the cobbler cool for 10-15 minutes before serving. It’s best enjoyed warm with a scoop of vanilla ice cream, a dollop of whipped cream, or crème fraîche.
