Grilled Lamb Chops with Mac and Cheese & Glazed Carrots 🍖🧀🥕
Ingredients:
For the Grilled Lamb Chops:
8 lamb chops (bone-in)
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
1 tbsp Dijon mustard
2 tbsp balsamic vinegar
Salt and pepper to taste
For the Mac and Cheese:
1 lb elbow macaroni
2 tbsp butter
2 tbsp flour
2 cups milk
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
For the Glazed Carrots:
4 large carrots, peeled and cut into thick slices
2 tbsp butter
1 tbsp brown sugar
1 tbsp honey
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:1. Prepare the Lamb Chops:
In a small bowl, mix together olive oil, garlic, rosemary, thyme, Dijon mustard, balsamic vinegar, salt, and pepper to create the marinade.
Coat the lamb chops with the marinade and let them marinate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your grill or grill pan over medium-high heat.
Grill the lamb chops for 4-5 minutes per side for medium-rare, or longer to your desired doneness. Let the lamb chops rest for a few minutes before serving.
2. Make the Mac and Cheese:
Cook the elbow macaroni according to package instructions. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes.
Gradually add the milk while whisking continuously to avoid lumps. Cook until the mixture thickens, about 4-5 minutes.
Stir in the shredded cheddar and mozzarella cheese until melted and smooth. Season with garlic powder, onion powder, salt, and pepper.
Add the cooked pasta to the cheese sauce and stir to coat evenly. Set aside.
3. Prepare the Glazed Carrots:
In a large pan, melt butter over medium heat. Add the carrots and cook for 5 minutes, stirring occasionally.
Add the brown sugar, honey, salt, and pepper. Stir well and cook for an additional 5-7 minutes until the carrots are tender and glazed.
Garnish with chopped parsley before serving.
Serve:
Plate the lamb chops alongside the mac and cheese and glazed carrots. Garnish the lamb with fresh herbs if desired, and enjoy!
