Delicious Plant-Based Omelette Recipe - Perfect Vegan Breakfast! 😋

Ingredients:
For the Omelette Batter:
1 cup (120g) Chickpea Flour (Gram Flour/Besan)
1 cup (240ml) Water (plus maybe 1-2 tbsp more)
2 tablespoons (10g) Nutritional Yeast
1/2 teaspoon Baking Powder
1/4 teaspoon Turmeric (for color)
1/4 teaspoon Black Salt (Kala Namak, optional for eggy flavor)
Salt and Black Pepper to taste

For the Mushroom Filling:
1 tablespoon (15ml) Olive Oil or Vegan Butter
8 oz (225g) Mushrooms (Cremini or Button), sliced
1 clove Garlic, minced
1 tablespoon Fresh Parsley or Chives, chopped
Salt and Pepper to taste

Directions:
1. Prepare Filling: Heat oil/vegan butter in a skillet over medium heat. Add sliced mushrooms and cook until browned and softened (about 5-7 minutes). Add minced garlic and cook for 1 minute more. Stir in chopped parsley/chives, salt, and pepper. Remove from skillet and set aside. Wipe the skillet clean.
2. Make Omelette Batter: In a medium bowl, whisk together the chickpea flour, nutritional yeast, baking powder, turmeric, black salt (if using), salt, and pepper. Gradually whisk in the water until you have a smooth, relatively thin batter (like crepe batter). Add an extra tablespoon or two of water if it seems too thick. Let the batter rest for 5-10 minutes.
3. Cook Omelette: Heat a lightly oiled 8-10 inch non-stick skillet over medium-low heat. Once hot, pour about 1/2 cup of the batter into the center of the skillet, swirling the pan to create a thin, even circle.
4. Cook Through: Cook for 4-6 minutes, undisturbed, until the edges look dry and bubbles appear on the surface. The top should look mostly set. Carefully loosen the edges with a spatula.
5. Add Filling and Fold: Spoon half of the mushroom filling onto one half of the omelette. Carefully fold the other half over the filling using the spatula.
6. Finish Cooking: Cook for another 1-2 minutes until heated through. Slide the omelette onto a plate. Repeat with the remaining batter and filling to make a second omelette.
7. Serve: Serve immediately.
