Taco Pasta! 🌮 doesn’t look pretty but it’s good, cheap and easy.
-Ground Beef
-Taco Sauce
-Shredded Cheese
-Sour Cream
-Black Beans
-Corn
-Taco Seasoning
-Pasta
These are estimates because I usually “eyeball” everything.
•Prepare Pasta, drain and set aside.
•Brown 1 lb beef, drain, add to pot.
•Add 1 cup water, seasoning (I would suggest 2, I only used 1), 1 can corn, 1 can black beans, 1 can rotel, 4 oz cheese (half bag), 1/4 cup taco sauce, 1/4 cup sour cream. Let simmer together for a few minutes and add pasta. Mix. (You can also add more cheese if needed. I had some Velveeta Queso Blanco and cut off a cube about 3 inches wide)
•Add pasta to baking dish, top with remaining cheese.
•Cook on 350 till cheese is melted
I served mine with extra sour cream and taco sauce. I added some crushed Doritos on top of my kids’ plates since I wasn’t sure if they’d like it.
Super yummy and can be made for around $15 (where I live- but I live in the lowest cost of living state in the US so probably closer to $20 elsewhere) DEFINITELY plenty to feed my family of 4 tonight and for lunch too for my girls. I love that they are getting lots of food groups in one dish and they like it.
