Indulgent White Chocolate Blueberry Cheesecake

2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
3 cups cream cheese, softened
1 cup white chocolate chips, melted
1/2 cup sugar
1 teaspoon vanilla extract
2 large eggs
1 cup sour cream
1 1/2 cups fresh blueberries
Directions:
Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set aside.
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
In a large mixing bowl, beat the cream cheese until smooth. Add the melted white chocolate chips, sugar, and vanilla extract, mixing until well combined.
Add the eggs one at a time, mixing well after each addition. Stir in the sour cream and mix until smooth.
Pour the cheesecake batter into the prepared crust and smooth the top with a spatula.
Scatter the fresh blueberries evenly over the top of the batter.
Bake for 50-60 minutes, or until the center is set and a toothpick inserted comes out clean. Turn off the oven and allow the cheesecake to cool in the oven with the door slightly ajar for about 1 hour.
After cooling, transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight.
Once chilled, remove from the springform pan, slice, and serve!
