🇮🇹 Spaghetti alla Nerano (Zucchini Pasta)
Golden zucchini slices tossed with spaghetti and cheese—creamy and comforting.
Ingredients:
• 2 zucchinis, sliced
• 12 oz spaghetti
• 1/2 cup Parmesan cheese
• Olive oil for frying
• Salt and pepper
• Fresh basil (optional)
Instructions:
1. Fry zucchini slices until golden. Set aside.
2. Boil spaghetti in salted water until al dente.
3. Toss pasta with zucchini and Parmesan, adding some pasta water.
4. Mix until creamy. Season and garnish with basil.
