🥔 Loaded Potato & Meatloaf Casserole
Ingredients:
1 lb ground beef
1/2 cup breadcrumbs
1 egg
1/4 cup milk
1/4 cup ketchup
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
Salt and pepper, to taste
4 large russet potatoes, peeled and sliced
1/2 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup green onions, chopped
2 tbsp butter
1/2 cup cooked bacon bits (optional)
Instructions:
1️⃣ Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
2️⃣ In a large bowl, combine ground beef, breadcrumbs, egg, milk, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until well combined. Form into a loaf and place in the center of the baking dish.
3️⃣ Arrange sliced potatoes around the meatloaf in the dish.
4️⃣ Cover with foil and bake for 45–50 minutes, or until the meatloaf is cooked through and potatoes are tender.
5️⃣ Remove foil, sprinkle shredded cheddar cheese over the top of the meatloaf, and bake for an additional 10–15 minutes until cheese is melted and bubbly.
6️⃣ Top with sour cream, green onions, and bacon bits, if using. Serve immediately.
