Ingredients
For the Crust:
16 Oreo cookies, finely crushed (about 1 Β½ cups)
3 tablespoons unsalted butter, melted
For the Filling:
8 oz cream cheese, softened
ΒΌ cup granulated sugar
Β½ teaspoon pure vanilla extract
Β½ cup heavy whipping cream
8 Oreo cookies, roughly chopped into small pieces
For Coating:
8 Oreo cookies, finely crushed (about 1 cup)
Instructions
Step 1: Prepare the Crust Mixture
In a mixing bowl, combine the finely crushed Oreos with the melted butter. Stir until the mixture resembles wet sand. Divide the mixture evenly into the bottom of a mini muffin tin lined with paper liners, pressing firmly to form a compact layer. Place the tin in the freezer while you prepare the filling.
Step 2: Make the Creamy Filling
In a large bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture in three parts, ensuring the mixture stays light and airy. Fold in the roughly chopped Oreo pieces until evenly distributed.
Step 3: Assemble the Bites
Remove the muffin tin from the freezer. Spoon the cheesecake mixture over the crusts, dividing it evenly among the cups. Smooth the tops with a spoon or spatula. Return the tin to the freezer for at least 2 hours, or until the bites are firm.
Step 4: Coat and Serve
Once the bites are set, carefully remove them from the liners. Roll each bite in the finely crushed Oreos to coat the exterior completely. Place them back in the fridge for 15 minutes before serving to ensure they hold their shape.
