Greek Tomato & Feta Stack Salad
Ingredients:
2 large ripe tomatoes, sliced
1 small red onion, thinly sliced
150–200g feta cheese, cut into slices
A handful of fresh parsley, chopped
A few green olives (optional)
1–2 tbsp extra virgin olive oil
1 tsp dried oregano
Salt and black pepper, to taste
Instructions:
Prepare the ingredients: Slice the tomatoes and red onion. Cut the feta into thick square slices.
Layer the salad: On a plate, alternate stacking tomato slices, onion rings, and feta slices. Repeat to form a layered "tower".
Season: Drizzle with olive oil. Sprinkle dried oregano, salt, and freshly ground black pepper.
Garnish: Add chopped parsley on top and around the stack. Scatter some olives for extra flavor.
Serve: Enjoy it fresh as a starter or side dish!
