Rich Coffee-Infused Chocolate Sponge Cake

Ingredients:
For the Sponge Cake:
1 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
4 large eggs, room temperature
3/4 cup granulated sugar
1/4 cup unsalted butter, melted
1/4 cup strong brewed coffee, cooled
1 tsp vanilla extract
For the Coffee Syrup:
1/2 cup strong brewed coffee
1/4 cup sugar
For the Chocolate Ganache:
1 cup dark chocolate, chopped
1/2 cup heavy cream
1 tsp instant coffee granules (optional)
For Decoration:
Whipped cream or buttercream frosting
Chocolate shavings or cocoa powder
Coffee beans (optional)
Directions:
Preheat and Prep:
Preheat your oven to 350°F (175°C).
Grease and line two 8-inch round cake pans with parchment paper.
Make the Sponge Cake:
In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
In a large mixing bowl, beat the eggs and sugar on high speed until thick and pale (about 5-7 minutes).
Gently fold in the dry ingredients using a spatula.
Stir in the melted butter, cooled coffee, and vanilla extract until smooth and well-incorporated.
Divide the batter between the prepared cake pans.
Bake for 20-25 minutes, or until a toothpick comes out clean.
Let the cakes cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
Prepare the Coffee Syrup:
In a small saucepan, combine the brewed coffee and sugar over medium heat.
Stir until the sugar dissolves, then remove from heat and let cool.
Make the Chocolate Ganache:
Place the chopped chocolate in a heatproof bowl.
Heat the heavy cream in a saucepan until it begins to simmer.
Pour the hot cream over the chocolate and let it sit for a minute.
Stir the mixture until smooth and glossy. If desired, stir in the instant coffee granules for stronger flavor.
Let the ganache cool slightly until it thickens.
Assemble the Cake:
Place one cake layer on a serving plate and brush generously with coffee syrup.
Spread a layer of chocolate ganache over the top.
Place the second cake layer on top, repeating the syrup and ganache.
Frost the entire cake with whipped cream or buttercream, if desired.
Decorate:
Top with chocolate shavings, a dusting of cocoa powder, and coffee beans for a finishing touch.
Serve:
Slice and enjoy your cake with a cup of coffee or milk.
