● 1 1/2 cups (225g) fresh or jarred cherries, pitted and halved
● 1/4 cup (50g) granulated sugar
● 2 tbsp cornstarch
● 1/4 cup (60ml) water
● 1 tbsp kirsch (optional, for authentic flavor)

For the Whipped Cream Filling:
● 1 1/2 cups (360ml) heavy whipping cream
● 1/4 cup (30g) powdered sugar
● 1 tsp vanilla extract

For Garnish:
● Chocolate shavings or curls
● Whole cherries
● Powdered sugar

📝 Instructions

1: Prepare the Chocolate Sponge Cake: Preheat oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment. Sift flour, cocoa, baking powder, and salt into a bowl. Beat egg yolks with half the sugar until thick and pale. Mix in vanilla and milk. In a separate bowl, beat egg whites to soft peaks, gradually adding the rest of the sugar until stiff peaks form. Fold dry ingredients into yolks, then fold in egg whites in thirds. Spread batter evenly in the pan and bake for 10-12 minutes.

2: Roll the Cake: Flip the hot cake onto a powdered sugar-dusted towel, peel off the parchment, and roll gently with the towel. Let cool completely.

3: Make the Cherry Filling: Combine cherries, sugar, cornstarch, and water in a saucepan. Cook over medium heat, stirring until thickened. Stir in kirsch (if using) and cool completely.

4: Whip the Cream Filling: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.

5: Assemble the Roll Cake: Unroll the cooled cake. Spread a layer of whipped cream and top with the cherry filling. Gently roll the cake back up and place seam-side down on a platter.
