Korean BBQ Meatball Tacos
Ingredients:
1 pound ground beef
1/2 cup panko breadcrumbs
1/4 cup green onions, finely chopped
1/4 cup soy sauce
2 tablespoons sesame oil
1 tablespoon brown sugar
1 tablespoon minced garlic
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional)
8 small corn or flour tortillas
1 cup shredded cabbage
1/2 cup diced cucumbers
1/4 cup cilantro, chopped
1/4 cup sriracha sauce (for serving)

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large bowl, combine ground beef, panko breadcrumbs, green onions, soy sauce, sesame oil, brown sugar, minced garlic, ground ginger, black pepper, and red pepper flakes. Mix until well combined.
3. Shape the mixture into meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.
4. Bake the meatballs in the preheated oven for 15-20 minutes, or until cooked through and browned.
5. While the meatballs are baking, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
6. Assemble the tacos by placing a few meatballs in each tortilla. Top with shredded cabbage, diced cucumbers, and cilantro.
7. Drizzle with sriracha sauce before serving.
