Refreshing Gluten-Free Key Lime Cashew Energy Bars 💪🥥
Ingredients:
1 cup (140g) Raw Cashews
1 cup (150g) Medjool Dates, pitted (about 10-12 dates)
1/2 cup (40g) Unsweetened Shredded Coconut
Zest of 1-2 Limes (to taste)
2-3 tablespoons Fresh Lime Juice
1/4 teaspoon Vanilla Extract (optional)
Pinch of Salt
Directions:
1. Process Cashews: Place the raw cashews in a food processor. Pulse until they are broken down into small crumbs, but not yet butter.
2. Add Dates & Coconut: Add the pitted Medjool dates and shredded coconut to the food processor. Process until the mixture starts to clump together.
3. Add Flavor: Add the lime zest, lime juice, optional vanilla extract, and pinch of salt. Process again until a sticky dough forms that holds together when pressed. If too dry, add another teaspoon of lime juice; if too wet, add a bit more coconut or a tablespoon of oats.
4. Press into Pan: Line an 8x4 inch loaf pan or a small square container with parchment paper, leaving some overhang for easy removal. Press the mixture firmly and evenly into the bottom of the prepared pan.
5. Chill: Place the pan in the refrigerator or freezer for at least 30 minutes (fridge) or 15 minutes (freezer) to firm up.
6. Cut & Serve: Lift the mixture out of the pan using the parchment paper overhang. Cut into bars or squares. Store in an airtight container in the refrigerator.
