Roasted Sausages with Sweet Potato, Zucchini & Broccoli

Ingredients:
4 Italian sausages (chicken), sliced into thick rounds
2 cups sweet potatoes, peeled and cubed
2 cups broccoli florets
2 cups zucchini, sliced into half-moons
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and freshly ground black pepper, to taste

1 tablespoon fresh parsley, chopped
Directions:
Preheat oven to 425°F (220°C).
In a large bowl, combine sweet potatoes, broccoli, zucchini, and sausage slices.
Drizzle with olive oil, then sprinkle with garlic powder, smoked paprika, oregano, salt, and pepper. Toss everything well to coat evenly.
Spread the mixture on a large baking sheet lined with parchment paper. Make sure the vegetables and sausages are in a single layer.
Roast for 25–30 minutes, flipping halfway through, until the veggies are tender and slightly crispy, and the sausage is browned.
Sprinkle with fresh parsley before serving.
