Ingredients:
2 salmon fillets (around 6 oz each)
1/2 lb shrimp, peeled and deveined
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 lemon (sliced)
Salt and pepper to taste
Fresh parsley, chopped for garnish
Optional: lemon juice, for drizzling
Instructions:
For the Salmon:
Prep the Salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and a sprinkle of garlic powder or your preferred seasoning.
Grill the Salmon: Heat a grill pan or outdoor grill over medium-high heat. Drizzle olive oil over the pan, and place the salmon fillets skin-side down. Grill for about 4-5 minutes per side, depending on thickness, until the salmon is cooked through and has grill marks.
Add the Lemon: While grilling, place the lemon slices on the grill for 1-2 minutes, until they are lightly charred.
For the Shrimp:
Cook the Shrimp: In a separate pan, heat the butter over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant.
Add Shrimp: Add the shrimp to the pan, seasoning with salt, pepper, and a squeeze of lemon juice. Cook for about 2-3 minutes per side, until the shrimp turn pink and opaque.
Finish with Garlic Butter: Stir the shrimp around in the garlic butter to coat evenly.
Assembling:
Plate the Dish: Place the grilled salmon on a plate. Arrange the shrimp around the salmon fillet.
Garnish and Serve: Garnish with fresh chopped parsley and the charred lemon slices. You can also drizzle some additional lemon juice over the top for extra flavor.
Tips:
For added flavor, you can marinate the salmon in lemon juice, olive oil, and garlic for about 15 minutes before grilling.
