**No-Bake Snickers Cheesecake**
**Ingredients:**
**For the Crust:**
* 1 ½ cups chocolate cookies (like Oreos), finely crushed (cream filling removed)
* 6 tablespoons unsalted butter, melted
**For the Cheesecake Filling:**
* 2 (8 ounce) packages cream cheese, softened
* ½ cup powdered sugar
* 1 ½ cups heavy whipping cream
* 1 teaspoon vanilla extract
**For the Caramel Chocolate Topping:**
* 1 cup semi-sweet chocolate chips
* ½ cup heavy whipping cream
* ½ cup prepared caramel sauce (or homemade)
**For Decoration:**
* Snickers bars, roughly chopped
**Instructions:**
1. **Make the Crust:** Finely crush the chocolate cookies (remove the cream filling). In a medium bowl, combine the crushed cookies with the melted butter. Mix well until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while you prepare the filling.
2. **Make the Cheesecake Filling:** In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and beat until well combined and creamy. Stir in the vanilla extract.
3. In a separate chilled bowl, beat the heavy whipping cream with an electric mixer until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and well combined.
4. Pour the cheesecake filling over the chilled cookie crust in the springform pan. Spread evenly. Refrigerate for at least 4 hours, or preferably overnight, to allow the cheesecake to set completely.
5. **Make the Caramel Chocolate Topping:** In a microwave-safe bowl, combine the chocolate chips and heavy whipping cream. Microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth. Let it cool slightly.
6. **Assemble and Decorate:** Once the cheesecake is set, pour the cooled chocolate ganache over the top. Drizzle with additional caramel sauce, if desired. Sprinkle the chopped Snickers bars evenly over the top.
7. Refrigerate for another 30 minutes to allow the topping to set slightly before serving.
