Grilled Steak with Quinoa Salad
Ingredients:
- 1 lb lean steak (sirloin or flank)
- 1 cup quinoa
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 1/4 cup red onion (diced)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Preparation:
- Grill the steak to your preferred doneness (about 4-6 minutes per side).
- While grilling, cook quinoa as per package instructions.
- In a bowl, combine cooked quinoa, cucumber, cherry tomatoes, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper. Drizzle over the quinoa salad.
- Slice the steak thinly and serve over the quinoa salad.
