Red Velvet Cake Ice Cream. This delicious dessert combines creamy ice cream with chunks of red velvet cake, perfect for a sweet treat!
Ingredients:
For the Red Velvet Cake:

1 box red velvet cake mix (or homemade red velvet cake if you prefer)

Ingredients needed for the cake mix (usually eggs, oil, and water)

For the Ice Cream:

2 cups heavy whipping cream

1 cup whole milk

3/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 cup cream cheese (optional, for extra creaminess)

1/4 cup powdered sugar

For Mixing:

2-3 cups of red velvet cake, crumbled (you can use leftover red velvet cake or bake fresh and crumble it)

Instructions:
1. Bake the Red Velvet Cake:
Prepare the red velvet cake according to the instructions on the box (or use your homemade red velvet cake recipe).

Allow the cake to cool completely, then crumble it into small chunks. Set aside.

2. Make the Ice Cream Base:
In a large mixing bowl, combine the heavy whipping cream, whole milk, and granulated sugar.

Stir until the sugar dissolves completely.

Add the vanilla extract and powdered sugar, and whisk to combine.

If you want a richer, creamier base, you can add 1/2 cup of cream cheese and whisk it into the mixture.

3. Churn the Ice Cream:
Pour the ice cream mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20-25 minutes).

Once the ice cream has thickened, stop the machine.

4. Add the Red Velvet Cake:
Gently fold in the crumbled red velvet cake into the ice cream mixture. Be sure not to break up the cake too much, leaving nice chunks throughout.

If you prefer a swirl effect, you can add the cake crumbles in layers, alternating with the ice cream mixture, and then swirl them gently with a spoon.

5. Freeze:
Transfer the mixture into an airtight container and smooth the top.

Freeze for at least 4-6 hours, or until the ice cream is firm and scoopable.

6. Serve:
Scoop the red velvet cake ice cream into bowls or cones and enjoy!

Tips:
If you want to enhance the flavor, you can add chocolate chips, or chunks of cream cheese frosting, or mix in some vanilla or cream cheese ice cream base.

This dessert can also be made without an ice cream maker by placing the mixture in a container and stirring every 30 minutes until it reaches the desired consistency (about 4-6 hours).

Enjoy your indulgent Red Velvet Cake Ice Cream!
