For the Base:
200g (2 cups) graham crackers or digestive biscuits, crushed
100g (1/2 cup) unsalted butter, melted
For the Cheesecake Layer:
250g (1 cup) cream cheese, softened
100g (1/2 cup) granulated sugar
200ml (1 cup) heavy cream, whipped
1 tsp vanilla extract
For the Pineapple Mousse:
300ml (1 1/4 cups) pineapple juice
2 tbsp powdered sugar
2 tbsp gelatin or agar-agar, dissolved in warm water
200ml (1 cup) whipped cream
For Garnish:
Pineapple slices or chunks
Mint leaves

Prepare the Base:
Mix crushed biscuits with melted butter.
Press the mixture into the base of a springform pan and refrigerate for 30 minutes.
Make the Cheesecake Layer:
Beat cream cheese and sugar until smooth.
Fold in whipped cream and vanilla extract.
Spread over the chilled base and refrigerate for 1 hour.
Prepare the Pineapple Mousse:
Heat pineapple juice with powdered sugar. Stir until dissolved.
Add dissolved gelatin or agar-agar and mix well.
Let the mixture cool slightly, then fold in whipped cream.
Assemble the Mousse Layer:
Pour the pineapple mousse over the cheesecake layer.
Smooth the surface and refrigerate for at least 4 hours or overnight.
Garnish and Serve:
