Roasted Beet and Feta Stack 🥗🍂

3 large beets
6 oz feta cheese, crumbled
1/4 cup walnuts, toasted and chopped

1 tbsp honey
2 tbsp olive oil

Directions:

Roast the Beets:
Preheat your oven to 400°F (200°C). Wash and scrub the beets thoroughly. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 50-60 minutes, or until the beets are tender when pierced with a fork. Allow the beets to cool, then peel them and slice into 1/4-inch thick rounds.
