Ingredients:
For the Shrimp:

1 cup quinoa, rinsed and cooked π
2 tbsp fresh parsley, chopped πΏ
1 tbsp olive oil πΏ
1 tbsp lemon juice π

For the Toppings:
1 cup diced cucumber π₯
1 cup diced tomatoes π
1/4 cup kalamata olives, sliced π«
1/4 cup crumbled feta cheese π§
1/4 cup red onion, finely chopped (optional) π§
For the Tzatziki Sauce:
1/2 cup Greek yogurt π₯
1/4 cup grated cucumber, squeezed to remove excess water π₯
1 clove garlic, minced π§
1 tbsp fresh dill, chopped πΏ
1 tbsp lemon juice π
Salt & pepper to taste π§
Instructions:
Cook the Quinoa:
Rinse and cook the quinoa according to package instructions. Once cooked, fluff with a fork and stir in parsley, olive oil, lemon juice, and salt. Set aside.
