Cookie Dough Cheesecake
Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
2 packages (8 oz each) cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup heavy cream
1/2 cup cookie dough, small scoops (store-bought or homemade)
1/4 cup chocolate chips (optional, for topping)
Directions:
Preheat the oven to 325°F (163°C).
Mix the graham cracker crumbs, melted butter, and sugar in a bowl until combined. Press into the bottom of a springform pan to form the crust.
Bake the crust for 8 minutes, then let it cool.
In a mixing bowl, beat together the softened cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Pour the cheesecake batter into the cooled crust.
Bake the cheesecake for 55-60 minutes or until the center is almost set.
Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
Before serving, top with cookie dough scoops and chocolate chips if desired.
