🐰 No-Bake Easter Jello Pie 🥧
Ingredients
For the Crust:
1 ½ cups graham cracker crumbs (about 10–12 sheets)
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
For the Filling:
3 (3-ounce) packages of Jello (pastel flavors like lime, orange, and strawberry work beautifully)
3 cups boiling water (1 cup per Jello package)
1 ½ cups cold water (½ cup per Jello package)
1 (8-ounce) package cream cheese, softened
¼ cup powdered sugar
1 teaspoon pure vanilla extract
1 (8-ounce) container whipped topping, thawed
For Garnish:
Additional whipped topping
Sprinkles, edible Easter decorations, or fresh fruit
Instructions
Prepare the Crust:
In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the texture resembles wet sand. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill the crust in the refrigerator while you prepare the Jello layers.
Make the Jello Layers:
In a small bowl, dissolve one package of Jello in 1 cup of boiling water, stirring until completely smooth. Stir in ½ cup of cold water to cool the mixture slightly. Pour a thin layer of the Jello into the chilled crust and refrigerate for 30 minutes, or until set. Repeat this process with the remaining Jello flavors, allowing each layer to firm up before adding the next.
Prepare the Creamy Filling:
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in the whipped topping until the mixture is light, fluffy, and fully combined.
Assemble the Pie:
Once all the Jello layers are set, spread the creamy filling evenly over the top of the pie. Smooth the surface with a spatula for a polished look. Return the pie to the refrigerator and chill for at least 2 hours, or until the filling is firm and set.
Garnish and Serve:
Before serving, add dollops of additional whipped topping around the edges of the pie for a decorative touch. Sprinkle with colorful sprinkles, edible Easter-themed decorations, or fresh fruit to enhance the festive vibe. Slice and serve chilled.
