For the Strawberry Cream Cheese Filling:

8 oz cream cheese, softened

½ cup powdered sugar

½ cup whipped cream or whipped topping

½ cup finely chopped strawberries

For the Strawberry Glaze:

1 cup powdered sugar

2–3 tbsp strawberry puree

1 tbsp milk or heavy cream (adjust for consistency)

Few drops red or pink food coloring (optional)

For the Crunch Topping:

¾ cup crushed golden Oreos or vanilla wafer cookies

2 tbsp butter, melted

2 tbsp freeze-dried strawberries, crushed

2 tbsp chopped nuts (like walnuts or pecans – optional for texture)

🔪 Instructions

1. Make the Pound Cake:
Preheat oven to 325°F (165°C). Grease and flour two 8-inch cake pans.

Cream butter and sugar until fluffy (4–5 minutes).

Add eggs one at a time, mixing after each. Stir in vanilla.

In a separate bowl, whisk together flour, baking powder, and salt.

Alternate adding dry mixture and sour cream to the butter mixture.

Stir in strawberry puree and food coloring.

Divide into pans and bake 45–55 minutes, until toothpick comes out clean.

Let cool completely.

2. Cream Cheese Filling:
Beat cream cheese and powdered sugar until smooth.

Fold in whipped cream and chopped strawberries.

Chill until firm enough to spread.

3. Assemble the Cake:
Cut each cake in half horizontally (for 4 thin layers).

Spread cream cheese filling between layers.

Stack and lightly press to secure.

4. Make Strawberry Glaze:
Whisk powdered sugar, puree, and milk until pourable but thick.

Pour over the top and let it drip naturally down the sides.

5. Add Crunch Topping:
Mix cookie crumbs, melted butter, freeze-dried strawberries, and optional nuts.

Sprinkle generously over the glaze while still slightly tacky.

6. Garnish:
Add fresh halved strawberries on top like in the picture for that wow factor.
