Cheesecake stuffed chocolate chip cookies
ingredients
for the cheesecake filling:
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
for the cookie dough:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups chocolate chips
instructions
1. make the cheesecake filling: in a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth. scoop small spoonfuls onto a parchment-lined tray and freeze for 30–45 minutes.
2. make the cookie dough: cream together butter and both sugars. beat in eggs and vanilla.
3. in a separate bowl, mix flour, baking soda, and salt. gradually add dry ingredients to the wet. fold in chocolate chips.
4. preheat oven to 350°f (175°c).
5. scoop a large ball of cookie dough and flatten it slightly. place a frozen cheesecake dollop in the center, then cover with another piece of dough and seal the edges.
6. place on a lined baking sheet, spaced apart.
7. bake 12–14 minutes or until edges are golden and centers are just set.
8. cool slightly before serving — they’re best warm!
