π¦ Unicorn Cheesecake Cups : Whimsical, Creamy, Colourful & a No-Bake Magical Treat!
Ingredients:
(Makes 6β8 cups β depending on size)
For the Crust:
- 1 cup crushed Golden Oreos or graham crackers
- 3 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 8 oz (226 g) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 tbsp milk (to loosen mixture)
- 1 tub (8 oz) whipped topping (Cool Whip), thawed
- Gel food colouring (pink, purple, teal, yellow)
For Topping:
- Whipped cream
- Unicorn sprinkles or edible glitter
- Mini marshmallows or candy stars (optional)

Directions:
Step 1: Make the Crust
1. Mix crushed cookies with melted butter until sandy.
2. Spoon 2β3 tablespoons into the bottom of each cup and press down gently.
3. Chill in the fridge while you prepare the filling.

Step 2: Make the Cheesecake Base
1. Beat cream cheese until smooth and creamy.
2. Add powdered sugar, vanilla, and milk. Beat again until fluffy.
3. Gently fold in whipped topping until fully incorporated.

Step 3: Colour & Swirl
1. Divide mixture into 4 bowls. Tint each with a different pastel gel food colouring.
2. Spoon small dollops of each colour into your prepared cups.
3. Use a toothpick or skewer to gently swirl the colours together β donβt overmix!

Step 4: Chill & Decorate
1. Chill the cups for at least 2 hours (or until set).
2. Top with a swirl of whipped cream, unicorn sprinkles, and candy decorations just before serving.
