🧀✨ Mashed Potato Cheese Puffs✅
Crispy on the outside, gooey and cheesy on the inside. The ultimate comfort snack or side!
📝 Ingredients:
2 cups mashed potatoes (cold leftovers work best!)
1 large egg
1 cup shredded cheddar cheese
¼ cup grated Parmesan cheese
2 tbsp chopped green onions (optional)
¼ tsp garlic powder
Salt & pepper, to taste
¼ cup all-purpose flour (or as needed)
½ cup breadcrumbs (for coating)
Cooking spray or a little oil for greasing
🍴 Directions:
Preheat oven to 400°F (200°C). Grease a mini muffin tin or line with paper cups.
In a bowl, mix together mashed potatoes, egg, cheddar, Parmesan, green onions, garlic powder, salt, and pepper until well combined.
Stir in flour—just enough to help the mixture hold its shape.
Scoop about 1½ tablespoons of the mixture into each muffin cup. Press lightly to pack.
Sprinkle tops with breadcrumbs for a crispy finish.
Bake for 20–25 minutes, or until golden brown and crispy on the edges.
Let cool slightly before serving. Enjoy warm!
