Garlic Herb Steak & Roasted Baby Potatoes
Juicy, golden, and dripping with flavor!
Ingredients:
For the Steak:
• 2 NY strip or sirloin steaks
• Salt, black pepper, garlic powder
• 1 tbsp olive oil
• 2 tbsp butter
• Fresh parsley (chopped)
For the Potatoes:
• 1 lb baby potatoes (halved)
• 2 tbsp olive oil
• 1 tsp garlic (minced)
• 1 tsp dried rosemary or Italian seasoning
• Salt & pepper
Instructions:
1. Roast Potatoes: Toss halved potatoes with olive oil, garlic, rosemary, salt & pepper. Roast at 400°F (200°C) for 25–30 mins until golden.
2. Cook Steak: Season steaks well. Sear in hot skillet with olive oil, 3–4 mins per side. Add butter, baste the steaks, then let rest.
3. Serve: Plate steak slices over roasted potatoes. Drizzle pan juices and garnish with parsley.
