Best Patty Melts With Secret Sauce
Ingredients
1½ pounds ground beef
1 tsp kosher salt
½ tsp ground black pepper
12 slices sourdough bread
½ cup secret sauce
3 Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 tsp unsalted butter
Secret Sauce:
¼ cup Dijon mustard
¼ cup mayonnaise
1 tsp barbecue sauce
½ tsp hot sauce
Instructions
Make the Secret Sauce:
In a bowl, combine ¼ cup Dijon mustard, ¼ cup mayonnaise, 1 tsp barbecue sauce, and ½ tsp hot sauce. Mix well.
Store the sauce, covered, in the refrigerator for up to 3 days.
Prepare the Patties:
In a bowl, blend 1½ pounds ground beef with 1 tsp kosher salt and ½ tsp ground black pepper. Shape the mixture into 6 oval patties.
Caramelize the Onions:
In a medium cast iron skillet, melt 2 tablespoons of unsalted butter over medium heat.
Add the 3 thinly sliced Vidalia onions. Cook, stirring occasionally, until the onions are tender and golden, about 35 minutes.
Cook the Patties:
In a large cast iron skillet, cook the patties over medium-high heat until golden brown and cooked through, about 2 minutes per side.
Remove the patties from the skillet and wipe the skillet clean.
Assemble the Patty Melts:
Layer one slice of sourdough bread with 1 tablespoon of secret sauce, 2-3 tablespoons of caramelized onions, 1 slice of Cheddar cheese, and 1 patty.
Add another 1 tablespoon of secret sauce on top of the patty, then cover with another slice of sourdough bread.
Repeat with the remaining bread, secret sauce, caramelized onions, cheese, and patties.
Cook the Patty Melts:
In the large cast iron skillet, melt some unsalted butter over medium heat.
Cook each sandwich until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
