Creamy Tom Yum Udon 🍜🦐
Spice up your dinner routine with this Creamy Tom Yum Udon—a rich, savory, and tangy noodle dish ready in just 20 minutes! Perfect for quick weeknight meals.

Ingredients
Main Ingredients:
6 shrimp, peeled and deveined
1 tbsp butter
5 button mushrooms, sliced
1/2 tbsp minced garlic
1 cup unsweetened coconut milk
2 tbsp water
2 tsp sugar
2 tbsp tom yum paste
2 servings udon noodles

Garnishes (Optional):
Fresh cilantro
Chili oil

Instructions
Prepare the Udon Noodles:
Soak frozen udon noodles in warm water to loosen them. Drain and set aside (see notes).
Cook the Shrimp:
Heat a bit of oil in a pan over medium heat.
Add shrimp, season with salt and pepper, and cook for 1–2 minutes per side until 80% cooked. Remove and set aside.
Sauté Mushrooms and Garlic:
In the same pan, melt 1/2 tbsp butter and sauté mushrooms until golden brown.
Add another 1/2 tbsp butter and minced garlic, sauté for 1 minute until fragrant.
Make the Sauce:
Pour in coconut milk, water, tom yum paste, and sugar. Stir until smooth and well combined.
Cook the Udon Noodles:
Add drained udon noodles into the sauce. Gently stir and cover with a lid for 1–2 minutes until the noodles are heated through.
Simmer and Finish:
Remove the lid, stir until noodles are evenly coated.
Reduce heat to medium-low and simmer for 2–3 minutes until the sauce thickens slightly.
Add shrimp back into the pan, stir, and turn off heat.
Garnish and Serve:
Serve hot, topped with fresh cilantro and a drizzle of chili oil for extra heat.
