Grilled Salmon & Cheesy Asparagus Tray 🧀🐟

📝 Ingredients:
2 salmon fillets (~5–6 oz each)
2 cups baby potatoes, whole or halved
1 bunch asparagus, ends trimmed
1/2 cup shredded mozzarella or melty cheese of choice
2 tbsp olive oil (divided)
1 garlic clove, minced
1 tsp smoked paprika
Salt & black pepper to taste
1 tbsp chopped fresh parsley (for garnish)
Lemon wedge (optional)
🍽️ Directions:
1️⃣ Roast the Potatoes:
Preheat oven to 400°F (200°C). Toss baby potatoes with 1 tbsp olive oil, salt, pepper, and garlic. Roast for 25–30 minutes until golden and crisp on the edges.
2️⃣ Grill or Sear the Salmon:
Pat salmon dry and season with smoked paprika, salt, and pepper.
Grill or sear in a pan over medium-high heat with 1 tbsp olive oil for 4–5 minutes per side until crispy on the outside and flaky inside.
3️⃣ Prepare the Asparagus:
Toss asparagus with a bit of olive oil, salt, and pepper. Roast for 10–12 minutes. In the final 3–5 minutes, top with shredded cheese and broil until melted and bubbly.
4️⃣ Assemble the Plate:
Place salmon, cheesy asparagus, and golden potatoes on a square or round serving dish. Sprinkle with chopped parsley.
5️⃣ Serve & Savor:
Optional: serve with lemon wedges for a zesty finish.
