Low carb spanikopita:
Wilt in a pan with olive oil spray
2 bags of spinach
1/4 cup green onion
1 chopped garlic clove
Drain and squeeze out water and add in:
16 oz ricotta cheese
3 eggs scrambled
1/4 cup good parmesan cheese
Sea salt good size pinch
Line a sprayed pie dish with:
4 low-carb tortillas
Add in filling
Cook at 350 for 45 min then turn up to 425 for 15-20 minutes until a knife comes out clean.
