Beef Tenderloin With Mashed Potatoes And Sautéed Vegetables
Ingredients :
2 beef fillets (approx 200g each)

600g of potatoes

200g of carrots, cut into pieces

100g of cherry tomatoes, cut in half

1 tablespoon of butter.

2 tablespoons of olive oil

2 sprouts of fresh rosemary

1 splinter of fresh thyme

100 ml of beef broth

1 tablespoon of balsamic vinegar

Salt and pepper to taste

1 clove garlic, finely chopped

2 tablespoons of sour cream (optional for puree)

1 tablespoon of honey (optional)

Instructions:
Prepare the mashed potatoes:

Peel the potatoes and cut them into equal chunks. Cook them in a large saucepan of salt water for about 15-20 minutes or until tender.

Drain the potatoes and mash them with a mash. Add butter, sour cream, season with salt and pepper. Mix well to get a smooth and creamy puree. Make your reservations.

Cooking stir fry vegetables:

In a skillet over medium heat, heat the olive oil. Add the carrots and saute for 5-7 minutes until slightly tender.

Add cherry tomatoes and minced garlic, then let cook for 2-3 more minutes. Season with salt, pepper and fresh thyme. Make your reservations.

Cooking beef tenderloin :

Heat a skillet with a little olive oil over medium-high heat. Add the beef tenderloins and cook 3-4 minutes on each side for a slow cook, or adjust the time to your desired cook (more or less longer for a bloody or well-cooked cook).

Remove the nets from the pan and let them sit for a few minutes.

Preparation of the sauce:

In the same pan, defrost with beef broth and balsamic vinegar. Add rosemary and let simmer for 3-4 minutes until sauce thickens slightly. Adjust salt and black pepper to taste.

Assembly of the dish:

Have a serving of mashed potatoes on each plate. Then place the beef tenderloin over the mashed potatoes, top with sautéed vegetables and pour a little reduced sauce on top.

Garnish with fresh rosemary strands and serve immediately.

Tips:
If you like a milder sauce, you can add a tablespoon of honey to the sauce to soften the balsamic vinegar.

For an even more intense flavor, saute the beef fillets with a little butter plus olive oil.

Conclusion :
This tenderloin of beef with mashed potatoes and sautéed vegetables is a simple yet elegant dish, perfect for impressing your guests or for a date night. Tender meat, creamy puree, and savory sauce create a perfect harmony of flavors and textures.
