Easy Chicken Fajitas
Ingredients:
1 lb boneless, skinless chicken breasts, thinly sliced
1 bell pepper, thinly sliced
1 onion, thinly sliced
2 tablespoons olive oil
2 tablespoons fajita seasoning
8 small flour tortillas
Optional toppings: salsa, sour cream, guacamole, shredded cheese, chopped cilantro, lime wedges
Instructions:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the sliced chicken to the skillet and sprinkle with 1 tablespoon of fajita seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion to the skillet and sprinkle with the remaining tablespoon of fajita seasoning. Cook, stirring occasionally, until the vegetables are tender and slightly charred, about 5-7 minutes.
Return the cooked chicken to the skillet with the vegetables and toss to combine. Cook for an additional 2-3 minutes to heat through.
Warm the flour tortillas according to package instructions.
Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings such as salsa, sour cream, guacamole, shredded cheese, chopped cilantro, and lime wedges.
