Hearty German Goulash Stew
Ingredients:
2 lbs beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
2 large onions, finely chopped
3 cloves garlic, minced
2 tablespoons paprika
1 teaspoon caraway seeds
1 tablespoon tomato paste
4 cups beef broth
2 large carrots, peeled and sliced
2 large potatoes, peeled and diced
1 red bell pepper, chopped
1 teaspoon marjoram
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Heat vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
In the same pot, add the onions and cook until they are soft and golden. Add the garlic and cook for another minute.
Stir in the paprika, caraway seeds, and tomato paste, and cook for 2 minutes.
Return the beef to the pot and pour in the beef broth. Bring to a boil, then reduce the heat and simmer for 1 hour.
Add the carrots, potatoes, red bell pepper, marjoram, salt, and pepper. Continue to simmer for another 30-45 minutes, or until the vegetables and meat are tender.
Adjust seasoning with salt and pepper if needed. Serve hot, garnished with fresh parsley.
