Beef Shank Goulash with Root Vegetables 🍲
Ingredients:
2 lbs beef shank, cut into chunks
2 tbsp olive oil
1 large yellow onion, chopped
3 garlic cloves, minced
3 carrots, peeled and chopped
2 parsnips, peeled and chopped
2 potatoes, peeled and diced
2 tbsp tomato paste
4 cups beef broth (low sodium)
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp black pepper
1 tsp salt (or to taste)
2 bay leaves
Fresh parsley, chopped (optional, for garnish)
Directions:
In a large pot or Dutch oven, heat olive oil over medium-high heat.
Add the beef shank chunks and brown on all sides, about 5-7 minutes. Remove and set aside.
In the same pot, add the chopped onion and sauté for about 3 minutes until softened.
Stir in the garlic and tomato paste, cooking for another minute.
Return the beef to the pot and pour in the beef broth. Stir in paprika, thyme, salt, pepper, and bay leaves.
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 hours, or until the beef is tender.
Add the carrots, parsnips, and potatoes. Stir well, cover again, and simmer for another 30-40 minutes, or until vegetables are fork-tender.
Remove bay leaves before serving. Garnish with fresh parsley if desired.
