Tender Korean BBQ Meatballs with Spicy Mayo Dip
Ingredients:
For the Meatballs:
1 lb ground beef (or a mix of beef and pork)
2 garlic cloves, minced
1/4 cup green onions, finely chopped
1/4 cup panko breadcrumbs
1 egg
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp brown sugar
1 tsp grated fresh ginger
1/2 tsp black pepper
1 tsp gochujang (Korean chili paste)
For the Spicy Mayo Dip:
1/3 cup mayonnaise
1 tbsp sriracha or gochujang (to taste)
1 tsp lime juice
Pinch of sugar
Directions:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine all meatball ingredients. Mix gently until fully incorporated—do not overmix.
Form mixture into 1.5-inch meatballs and place them evenly on the prepared baking sheet.
Bake for 18-20 minutes or until meatballs are cooked through and golden brown.
Meanwhile, whisk together all the ingredients for the spicy mayo dip in a small bowl until smooth.
Serve meatballs warm with the spicy mayo on the side or drizzled over the top. Garnish with extra green onions and sesame seeds if desired.
