Ingredients:
For the Cheesesteak:

1 lb ribeye steak (thinly sliced)

1 large onion (sliced thinly)

2 tablespoons olive oil

4 hoagie rolls or sandwich rolls

8 oz provolone cheese (or cheese of your choice, like American or mozzarella)

Salt and pepper to taste

For the Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic (minced)

1 tablespoon lemon juice

1 tablespoon olive oil

Salt and pepper to taste

Instructions:
1. Prepare the Garlic Aioli:

In a small bowl, combine the mayonnaise, minced garlic, lemon juice, olive oil, salt, and pepper. Stir until smooth. Adjust seasoning to taste.

Set aside in the refrigerator to let the flavors meld together while you prepare the cheesesteak.

2. Cook the Cheesesteak:

Heat 1 tablespoon of olive oil in a large skillet or griddle over medium-high heat.

Add the thinly sliced onions and sauté for about 4-5 minutes until softened and caramelized. Remove from the pan and set aside.

In the same skillet, add another tablespoon of olive oil and heat. Add the thinly sliced ribeye steak and season with salt and pepper. Cook for about 4-5 minutes, or until the beef is browned and cooked through. You can also cook the beef in batches to avoid overcrowding the pan.

Once the beef is cooked, mix the sautéed onions back into the beef and stir to combine.

3. Assemble the Sandwich:

Split the hoagie rolls and lightly toast them on the griddle or in a toaster.

Spread a generous amount of garlic aioli on both sides of the toasted hoagie rolls.

Pile the cooked cheesesteak mixture (beef and onions) onto each hoagie roll.

Place 2 slices of provolone cheese (or your cheese of choice) on top of the beef mixture. You can also melt the cheese under a broiler or in the microwave if you prefer a melty, gooey sandwich.

Optional: add any other toppings like lettuce or pickles if desired.

4. Serve:

Serve the cheesesteak sandwiches immediately with your favorite side dish or chips.

Garnish with fresh parsley or more aioli if desired.
