Garlic Herb Steak & Crispy Potatoes 🥩🥔

📝 Ingredients:
For the Steak:
1 ribeye or NY strip steak (about 1 inch thick)
Salt & freshly ground black pepper
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, smashed
Fresh rosemary or thyme sprigs
For the Potatoes:
1 lb baby potatoes, halved
1 tbsp olive oil
1 tbsp butter
1 tsp garlic powder
Salt & pepper to taste
Fresh herbs (parsley, thyme, or rosemary)
🍽️ Directions:
1️⃣ Boil & Sear the Potatoes:
Boil halved potatoes for 10 minutes until fork-tender. Drain and let dry. Sear in a hot pan with olive oil and butter until golden and crispy. Season with garlic powder, salt, and herbs.
2️⃣ Prep the Steak:
Pat steak dry and season generously with salt and pepper. Let sit at room temp for 20–30 minutes before cooking.
3️⃣ Sear the Steak:
Heat olive oil in a cast-iron pan over high heat. Sear steak 2–3 minutes per side until a deep crust forms. Add butter, garlic, and herbs. Tilt the pan and baste the steak with melted butter for 1–2 minutes.
4️⃣ Rest & Slice:
Remove steak from heat and let it rest for 5–10 minutes before slicing.
5️⃣ Serve & Garnish:
Plate the steak with the crispy potatoes and garnish with fresh rosemary or thyme. Serve hot and enjoy that perfect sear.
