Ingredients:
1 large Flatbread or Naan (store-bought or homemade, approx 10-12 inches)
1 tablespoon Olive Oil
8 oz (225g) Mushrooms (cremini or button), sliced
2 cloves Garlic, minced
2 cups (60g) Fresh Spinach
1/4 cup Pizza Sauce or Pesto
1/2 cup (50g) Shredded Mozzarella (or vegan alternative)
2 tablespoons Grated Parmesan (or vegan alternative/nutritional yeast) (optional)
Red Pepper Flakes (optional)
Salt and Black Pepper to taste

Directions:
1. Preheat oven to 400°F (200°C). If your flatbread is thick, you might want to pre-bake it directly on the oven rack for 3-4 minutes to crisp it up slightly.
2. Heat olive oil in a skillet over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and start to brown (about 5-7 minutes).
3. Add the minced garlic to the skillet and cook for another minute until fragrant.
4. Add the fresh spinach to the skillet. Cook, stirring, just until the spinach wilts down (about 1-2 minutes). Season the mushroom and spinach mixture with salt and pepper. Remove from heat.
5. Place the flatbread on a baking sheet or pizza stone.
6. Spread the pizza sauce or pesto evenly over the flatbread, leaving a small border.
7. Sprinkle half of the mozzarella (or vegan alternative) over the sauce.
8. Spoon the cooked mushroom and spinach mixture evenly over the cheese layer.
9. Top with the remaining mozzarella and sprinkle with Parmesan (if using) and red pepper flakes (if desired).
10. Bake for 8-12 minutes, or until the flatbread is heated through, the edges are golden, and the cheese is melted and bubbly.
11. Let it cool for a minute or two before slicing and serving.
