I know these are not a new thing, but I highly recommend these potatoes that come microwave ready. 10 minutes in the microwave and you have a perfectly cooked potato. And for seasonings, I'll use light sour cream, my favorite all purpose seasoning shake, or even sometimes salsa or kimchi to add a little zip.
Today for lunch, I'll actually be having it with my Panera chicken tortilla soup and light sour cream. Quick, easy, and only about 4 points for the potato, 2 cups of soup, and a big squeeze of the sour cream. Very filling and hearty!
Edit: I didn't mean to cause a conversation about the cost of pre-wrapped potatoes vs. A big bag of potatoes. I do have a big bag at home. I just know a lot of us have to sometimes get what's most convenient, and this is a lot better than going through a drive through for those of us on this plan. I apologize for causing a stir regarding a potato.
