🛒 Ingredients:

🧈 Unsalted butter: 75g, softened

🍬 Light brown sugar: 150g

🥚 Eggs: 2 large

🥛 Vanilla extract: 1 tsp

For the Toffee Sauce:

🍬 Light brown sugar: 150g

🥛 Double cream: 200ml

🍯 Golden syrup: 1 tbsp

💧 Vanilla extract: 1 tsp

🍴 Method:
For the Sponge:
Prepare the dates:

🍵 Place the chopped dates in a bowl, pour over the boiling water, and stir in the bicarbonate of soda. Set aside for 10 minutes to soften, then mash lightly with a fork.

Preheat the oven:

🔥 Heat your oven to 180°C (fan 160°C). Grease and line a 20cm square baking tin.

Mix the dry ingredients:

🥄 In a bowl, sift together the plain flour and baking powder.

Cream butter and sugar:

🧈 Beat the softened butter and sugar until light and fluffy. Gradually add the eggs, one at a time, mixing well. Stir in the vanilla extract.

Combine the batter:

Add the cream:

🥛 Gradually stir in the double cream and vanilla extract. Simmer for 2–3 minutes until the sauce thickens slightly.

To Serve:
Drizzle the sauce:

🍮 Poke holes in the sponge with a skewer and pour half of the warm toffee sauce over the top, allowing it to soak in.

Plate up:

🍽 Slice the pudding, drizzle with extra sauce, and serve with whipped cream, custard, or vanilla ice cream.
