Creamy Potato Soup
Ingredients:
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions:
1. In a large pot, sauté the onion and garlic until fragrant.
2. Add the diced potatoes and broth, bring to a boil, then reduce heat and let simmer until potatoes are tender.
3. Use an immersion blender to puree the soup until smooth.
4. Stir in the heavy cream and season with salt and pepper.
5. Serve hot, garnished with chopped chives.
