Banana Bread Cinnamon Rolls
Ingredients:
For the Dough:
- 1 cup mashed ripe bananas (about 2-3 bananas)
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk, warmed to about 110°F
- 2 1/4 teaspoons (1 packet) active dry yeast
- 2 large eggs
- 4 cups all-purpose flour, plus extra for dusting
- 1 teaspoon salt
For the Filling:
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 2 teaspoons ground cinnamon
For the Cream Cheese Icing:
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
Directions:
1. In a small bowl, combine the warm milk and yeast. Let it sit for 5-10 minutes until it becomes frothy.
2. In a large mixing bowl, mix together the mashed bananas, granulated sugar, melted butter, and eggs.
3. Add the yeast mixture to the banana mixture and stir until combined.
4. Gradually add the flour and salt to the wet ingredients, mixing until a soft dough forms.
5. Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
6. Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1-1.5 hours or until it doubles in size.
7. While the dough is rising, prepare the filling by mixing the softened butter, brown sugar, and cinnamon in a bowl until smooth.
8. Once the dough has risen, punch it down and roll it out into a rectangle about 16x12 inches.
9. Spread the cinnamon filling evenly over the dough.
10. Starting at the long end, tightly roll up the dough into a log.
11. Cut the log into 12 equal slices and place them in a greased baking pan, spaced slightly apart.
12. Cover and let the rolls rise for another 30-45 minutes until puffy.
13. Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes or until golden brown.
14. While the rolls bake, prepare the cream cheese icing by beating together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
15. Remove the rolls from the oven and allow them to cool slightly before spreading the icing on top.
