Keto Cinnamon Roll Cake with Cream Cheese Glaze
🧂 Ingredients
For the Cake:
2 cups almond flour
¼ cup coconut flour
⅓ cup erythritol or monk fruit sweetener
1 tablespoon baking powder
½ teaspoon salt
½ cup unsalted butter, melted
4 large eggs
½ cup unsweetened almond milk (or heavy cream for extra richness)
1 teaspoon vanilla extract
For the Cinnamon Swirl:
⅓ cup melted butter
⅓ cup brown-style keto sweetener (like Swerve Brown or Golden Monk Fruit)
1 tablespoon cinnamon
¼ cup chopped pecans or walnuts (optional, for crunch)
For the Cream Cheese Glaze:
4 oz cream cheese, softened
2 tablespoons butter, softened
½ cup powdered erythritol
1 teaspoon vanilla extract
2–3 tablespoons heavy cream (adjust for drizzling consistency)
👩🍳 Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Grease an 8×8-inch baking dish or small loaf pan with butter or nonstick spray.
2. Make the Cake Batter
In a large bowl, whisk together almond flour, coconut flour, baking powder, sweetener, and salt.
In another bowl, mix melted butter, eggs, almond milk, and vanilla.
Pour the wet ingredients into the dry and stir until you have a smooth, thick batter.
3. Prepare the Cinnamon Swirl
In a small bowl, combine melted butter, brown sweetener, and cinnamon. Stir until smooth.
4. Assemble the Cake
Spread half the cake batter into your prepared pan.
Drizzle half of the cinnamon swirl mixture over it.
Repeat with the remaining batter and swirl mixture — use a knife to gently create a marble pattern.
Sprinkle chopped nuts on top if you’re using them.
5. Bake
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let it cool slightly while you make the glaze.
6. Make the Glaze
Beat cream cheese, butter, powdered erythritol, and vanilla together until smooth.
Add heavy cream a tablespoon at a time until you reach a thick but pourable consistency.
7. Glaze & Serve
Pour the glaze generously over the warm cake so it melts into every bite.
