Keto Fudgy Brownies with Chocolate Frosting
Ingredients
For the brownies:
1 cup almond flour
½ cup unsweetened cocoa powder
½ cup powdered erythritol (or monk fruit sweetener)
½ tsp baking powder
¼ tsp salt
3 large eggs
½ cup melted butter (or coconut oil)
1 tsp vanilla extract
½ cup sugar-free chocolate chips (optional, for extra fudginess)
For the frosting:
½ cup sugar-free chocolate chips
3 tbsp heavy cream
2 tbsp butter
2 tbsp powdered erythritol
½ tsp vanilla extract
Instructions
1. Make the brownies
Preheat oven to 350°F (175°C). Grease and line an 8x8 pan.
In a bowl, whisk almond flour, cocoa, sweetener, baking powder, and salt.
In another bowl, beat eggs, melted butter, and vanilla.
Mix wet and dry together until smooth. Fold in chocolate chips.
Spread batter in pan and bake 18–22 minutes, until set but still soft in the center.
Let cool completely before frosting.
2. Make the frosting
In a saucepan, melt chocolate chips, heavy cream, butter, and sweetener together over low heat.
Stir until smooth, then remove from heat and mix in vanilla.
Spread frosting over cooled brownies.
3. Slice & enjoy
Cut into squares and serve. Best stored in fridge for fudgy texture.

For cakier brownies, add 1 extra egg.
For extra gooey texture, underbake slightly and chill before cutting.
Add chopped walnuts or pecans for crunch.
