🛒 Ingredients
🐔 2 chicken breasts
🫒 1 tbsp olive oil
🧂 Salt & pepper to taste
🧄 1/2 tsp garlic powder
🌿 1/2 tsp dried oregano
For the Salad Base:
🥬 2 cups mixed leafy greens
🍅 1 cup cherry tomatoes, halved
🥒 1 cup cucumber, thinly sliced
🌽 1 cup corn (fresh or canned, drained)
For the Guacamole:
🥑 1 ripe avocado
🍋 Juice of 1/2 lime
🧂 Salt to taste
🌶️ Optional: chili flakes for topping

Prep the chicken: Rub chicken with olive oil, garlic powder, oregano, salt, and pepper.
Grill the chicken: Cook on medium-high heat for 6 minutes per side, or until internal temp hits 165°F (74°C). Rest, then slice.
Make the guacamole: Mash avocado with lime juice and salt until creamy.
Assemble the bowl: Start with a base of greens. Arrange tomatoes, cucumber, corn, guacamole, and sliced chicken on top.
Garnish & serve: Sprinkle with chili flakes if desired. Serve immediately or store refrigerated for up to 2 days.
